Gluten Free Vegan Chocolate Chip Cookies


2/3 cup vegan margarine
1 cup vegan sugar
Fake eggs – 3 tblsp oil, 4 tblsp water, 2 tsp egg-free baking powder, beaten together
2 1/4 cups brown rice flour
1 tblsp tapioca powder
1 tblsp arrowroot flour
1tsp baking soda
1 tsp sea salt
2 tsp vanilla
1/2 bag of vegan chocolate chips

Preheat oven to 375 degrees. Cream marg and sugar together add the fake eggs, mix, stir in all the dry ingredients, mix well, add a tablespoon of water, mix, add chocolate chips, mix, then place teaspoonfuls of cookie dough on a greased cookie sheet. Push each one down with a fork then put into the oven for 10 -12 minutes until brown. Be careful removing cookies from the cookie sheet after baking. Gluten free cookies are very fragile when they are still hot.
